Some nights I love cooking. I also really enjoy cooking my homemade meals from scratch. Other nights, I just need to get dinner on the table with as little effort as possible.
Whether you’ve had a long day with the kids, a busy work schedule, or simply don’t feel like spending an hour or more in the kitchen, these are some of my favorite lazy dinner ideas that are still a real meal.
1.Broiled Meatball & Spaghetti
This is one of my go-to dinners when I need something easy and filling. I broil meatballs until they’re heated through and slightly crispy on the outside, then serve them over spaghetti with jarred pasta sauce.
If I have garlic bread in the freezer, I’ll throw that in too.
2. Loaded Baked Potatoes
Baked potatoes are one of the easiest dinners because everyone can customize their own.
Some of my favorite toppings include:
- Bush’s Baked Beans
- Shredded cheese
- Sour cream
- Bacon bits
- Green onions
- Butter
It’s simple, inexpensive, and surprisingly satisfying.
3.Tomato Soup & Grilled Cheese
You can’t go wrong with this classic especially on a rainy day
A warm bowl of tomato soup paired with a crispy grilled cheese sandwich is quick to make and always hits the spot.
4. Breakfast for Dinner
Eggs, toast, pancakes, waffles, or whatever breakfast foods you have on hand.
My toddler loves breakfast for dinner, and it’s usually one of the fastest meals I can make.
5.Quesadillas
Cheese quesadillas are a lifesaver on busy evenings.
You can add leftover chicken, beans, or vegetables if you have them, and serve with salsa or sour cream or both!
6.Rotisserie Chicken Night
A store-bought rotisserie chicken can become several meals.
You can serve it with anything you have on hand. Bagged salad, frozen vegetables, instant mashed potatoes, or rice for a dinner that’s almost effortless.
My go to is rotisserie chicken with turkey gravy over instant mashed potatoes
In the summer I also love a cold chicken pasta salad (recipe coming soon)
Final Thoughts 💭
Not every dinner has to be homemade from scratch.
Sometimes a successful dinner is simply one that’s easy, fills everyone’s stomach, and gets you through a busy day. These lazy dinner ideas help me keep meals simple while I am still feeding my family something they enjoy.
What are your favorite lazy dinners? I’d love to hear what you keep on rotation for those extra busy nights.
